To achieve this certification, brewers must meet certain criteria such as appropriate brewing water temperature and brewing time. SCA certified home brewers also have to have the ability to brew within the SCA ‘Golden Cup’ recommendations, which is a worldwide standard for an excellent cup of coffee. To achieve this standard, brew strength (measured in Total Dissolved Solids) needs to fall between 11.5-13.5 grams per litre, which corresponds to an extraction yield of 18-22 percent. This results in a coffee that is not under-extracted or over-extracted, but brewed to its full potential. The brewer’s 1500-watt heating element maintains an optimal brewing temperature of between 91°C - 96°C for a delightful extraction, with a brew time of approximately 6 minutes. A large shower head directly over the coffee basket ensures that the coffee grounds are evenly saturated, and a flat-bottom filter basket encourages a uniform extraction.
When it comes to brewing, the process is quick and simple. Add your water to the water chamber and pre-wet your paper filter in the filter basket with hot water from a kettle. Add your freshly ground coffee (medium grind) to the filter basket, attach the filter basket to the carafe, and slide the carafe under the brew head. To turn on the pre-infusion setting, press and hold the switch on the side of the brewer for a few seconds until it beeps. And to brew, press the switch once and the light will start to flash.
